Hearty Beef Stew


As the days get shorter and the nights grow longer, who doesn’t love warming up with a hearty bowl of stew? This beef stew is an easy crowd-pleaser - just leave it cooking on low in the crockpot during the day and it will be ready by dinner time! The nutritional benefits of this stew are also note-worthy. Hearty Beef Stew Recipe

Yields 6 Servings


Ingredients:

1 large turnip, peeled

1 large parsnip, peeled

2-3 large carrots, peeled

4-5 fingerling potatoes (leave peels on)

2 medium yellow onions

4-5 cloves garlic

3 cups beef bone broth (organic, grass-fed)

1½ lbs boneless chuck roast beef (organic, grass-fed)

3 T tomato paste

1 T olive oil

1 T butter

1 T Worcestershire sauce

2 T rosemary

2 tsp thyme

1 tsp caraway seeds

1 Bay leaf

Sea salt

Black Pepper


Directions:

  1. Preheat the slow cooker on high with the olive oil.

  2. Heat a saute pan with butter and brown the beef chuck (cut into 1-inch size pieces) until evenly browned (about 2-3 minutes on each side).

  3. Add finely chopped onion and minced garlic to the slow cooker. Cook for about 10 minutes on high heat.

  4. Add chopped turnip, parsnip, potatoes, chuck roast, tomato paste, bone broth, Worcestershire sauce, and spices (except for rosemary). Turn the slow cooker on low and cook for about 8 hours. In the last 20 minutes, add the rosemary.

  5. Garnish with fresh parsley, rosemary, or thyme. Enjoy! Leftovers can be kept for 3 days in the fridge, or in the freezer for 3 months.
